Another tradition of the Wednesday Club is apricot squares. This recipe has been handed down from their grandmother's day.
Simmer apricots (submerged in water) until soft, drain, cool, and chop.
Preheat oven to 350 degrees (F).
Mix butter, white sugar, and flour together until crumbly. Pack into an 8 by 8-inch pan. Bake for 25 minutes.
Mix flour, baking powder, and salt.
Beat eggs, brown sugar, and vanilla together.
Add in the flour mixture. Mix.
Stir in apricots and chopped nuts.
Spread over baked base layer.
Bake for 30 minutes at 350 degrees.
Cool to room temperature then cut into squares.
Due to the brown sugar, the bars will appear to brown too quickly. Ignore and make sure to cook until the center is set.
