Tim makes these pumpkin-based muffins with Ella on Halloween morning. Not too sweet, they're a great breakfast or snack choice to counter the influx of candy later in the day.
Preheat oven to 375 degrees (F). Grease a standard muffin tin (or line with paper liners).
Mix flour, spices, baking soda, salt, and oats in a mixing bowl. Break eggs into the dry mix and stir briefly with a fork. Add other wet ingredients and stir with a form until just mixed.
Spoon into muffin tin. Sprinkle oats on top if desired.
Bake 20 - 25 minutes until tops are golden brown.
Blend together 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon ground nutmeg, and 1/4 teaspoon ground allspice or cloves.
