Christmas Eve at the eatery was the perfect place for Grant to test his Festive Feta Appetizers. They're easy to whip up in a short time, and a crowd pleaser at any event at which you serve them.
Preheat the oven to 350 degrees (F).
combine the olive oil, diced tomatoes, chopped scallions, and crumbed feta in a bowl and mix thoroughly.
Top each naan bread with the mixture; sprinkle lightly with Greek seasoning.
Top with bits of shredded fresh basil, to taste.
Place on a cookie sheet and bake for 8 to 10 minutes, then remove from oven.
Drizzle with balsamic glaze.
Cut into halves or triangles for easy eating.
The feta mixture can also be served cold as a dip along with crispy crackers. Just remind your guests--no double dipping!
