Heat oven to 425 degrees (F).
Prepare your favorite two-crust pastry, or use store bought.
Stir together sugar, flour, cinnamon, and salt. Mix with apples.
Turn into pastry-lined 9- or 10-inch pie plate. Dot with butter, cover with top crust. Seal and flute edges and cut slits in top crust to vent. Brush with milk or egg yolk, sprinkle with sugar. Cover edge with foil and remove the last 30 minutes of baking.
Bake for 40 to 50 minutes, or until crust is nicely browned.
